Breakfast Scramble 

INGREDIENTS 

300grams firm tofu of your choice 

1/2 tsp Indian salt

1/2 tsp turmeric powder

1 large nob of vegan spread 

2 tablespoons of oat milk or soya milk 

1/4 tsp black pepper 

Method

Chop tofu into cubes and place into a mixing bowl 

Mash up with a fork until it resembles a scrambled egg texture 

Add the turmeric power and Indian salt 

Pour in the oat milk and mix well

Heat a pan, add the nob of vegan spread heat until melted 

Then add the tofu mix and cook on a medium heat for 10 minutes stirring occasionally

 

Then serve on some well buttered toast on its own or with a full breakfast as in the  picture

  

 

Plate up and enjoy …. With some ketchup or Brown sauce and nice hot cup of tea or coffee .;)
